I needed to feed a small army and needed something to mix things up a bit. I’ve been going through a little bit of withdrawal as I’m away from all my usual Mediterranean restaurants and this scratched the itch well.

I also made cauliflower rice instead of basmati. Everyone seemed to enjoy that as well. I’ll be posting that as a quick follow up recipe in the next day or so.

Also, this recipe called for 7 spice. I couldn’t find this at the store so I did some research. 7 spice has a few different mixtures depending on the region (Arabic, Lebanese, Moroccan). I went with a Lebanese mixture, but you could easily change this up by trying different 7 spice configurations. It pretty easy to make, just 7 spices in each measurements.   1. Chop or process the onions in a food processor. I did this in a food processor as that should give more flavor with the smaller pieces
  2. Chop the parsley in the same manner. There should be about equal parts of parsley and onion. The parsley gives a fresh taste so don't be scared about adding a lot.
  3. Use a cheesecloth or some paper towels to get moisture out of the chopped onions and parsley.
  4. Mix the spices, onions, parsley, and all spices together.
  5. Preheat your cast iron for 5-10 minutes on medium to medium-high.
  6. Form the meat mixture into around 4 inch tubes
  7. Grill each side for around 5 to 6 minutes a side. These are best at medium. Making sure there is a nice sear on each side will be about the right amount of time.
  8. Serve with rice and any other side (hummus, olives, pickles, feta)
